Skillet Lemon – Garlic Chicken and Green Beans Made Easy

Working a busy week filled with activities and responsibilities.  One needs to find seconds of time in all we do.  From going to work, driving, shopping, excercising and yoga classes all while trying to stay mentally sane after our rigorous day demands artfull skill and determination.  Like in all we do.  Here is a great and simple, and clean recipie I am sure you and your family will love.  Not to mention your pocketbook and health.  Skillet Lemon – Garlic Chicken.


Low Carb No Hassle!

Serves 4 – Prep Time: 10 min – Cooking Time: 30 min

Ingredients:
One Pound of Fresh Farmers Market Green Beans
1 ½ lbs. Organic Free Range Boneless Chicken Breasts
½ Cup Chopped Farmers Market Onions (raw)
2 tsp. Finely Chopped Farmers Market Garlic Cloves
4 ½ Tsp. Coconut Oil
¼ tsp. Fresh Ground Black Pepper
1 tsp. Fresh Grated Lemon Rind
½ Farmers Market Lemon ( juiced )

Heat Coconut Oil over low to medium heat. Add garlic and onions and stir until blended. Cook until tender about 5 min. Remove from skillet. Place chicken in the skillet. Cook over medium heat until chicken is thoroughly cooked about 12 to 15 min. Remove chicken from skillet and keep warm. Place green beans, pepper, cooked onions and garlic into the skillet. Cover and cook over medium to low heat for about 5 min or until green beans are tender. Add chicken, lemon juice and grated lemon rind and cook until heated.
